The name given to the dreadful wolf-shape that Sauron took when he went from Tol-in-Gaurhoth to do battle with Huan, the Hound of Valinor.
According to prophecy, Huan would not die until he had encountered the greatest of all wolves, so Sauron contrived to take on that role and defeat the hound.
He failed: the greatest of all wolves was not Wolf-Sauron, but Carcharoth of Angband, and through Lúthien's magic and Huan's valour Sauron was defeated.

Sauron Defeated: From the Black Gate Opens to the end of the Lord of the Rings and some other stuff on Numenor, including one of my favourite stories in the entire History of Middle-Earth, The Notion Club Papers.
The first idea was for Bilbo to have the adventures, though there was the problem of the fact that Bilbo was said to have had a long and happy life which made it hard for him to have had more adventures.
This is in contrast to The Two Towers, when Sam has left Frodo, and hears the orcs, talking though he has left the area and only follows the orcs, and Gollum is nowhere in the area, while in the Treason of Isengard, in the drafts, Gollum is there with the orcs.

When at last he was defeated and the Ring stripped from him, he became crippled as regards the amount of his power.
Tolkien seems to imply that he was able to nurse himself back to health somewhat when he states "always after a defeat and a respite, the Shadow takes shape and grows again." But it is clear that he could never return to full power without the Ring.
So the conclusion is that if he could be attacked and defeated by Gil-Galad and Elendil, Elendil's sons and the Hosts of Gil-Galad *with* the Ring, then perhaps the combined might of Gandalf, Aragorn, the Sons of Elrond, Theoden, Eomer and Eowyn, Denethor's and Theoden's armies, and Faramir… could have defeated him *without* it.

I finished reading Sauron Defeated last week, volume nine (of twelve) of the History of Middle-earth series.
Tolkien first wrote the "Fall of Numenor" around 1937 (published in volume five, The Lost Road); he wrote this version of the legend as if it had been recorded by elves.
The version in Sauron Defeated, called the "Drowning of Anadune", Tolkien wrote in 1945 as if it had been recorded by men.

Certainly a book designed for die-hard Tolkien fans, 'Sauron Defeated' hardly represents interesting reading for people unfamiliar with the Lord of the Rings series.
Although some parts of 'Sauron Defeated' are better off left out in its next edition, it presents enough interesting information in its 482 pages to make it a worthwhile (not to mention impressive) presence in your Tolkien library.
