Sauternes is a type of dessert wine from the Sauternais region of the Graves section in the well known Bordeaux wine making area of France.
Sauternes is made from Sémillon, Sauvignon Blanc, and Muscadelle grapes that have been affected by Botrytis cinerea, also known as noble rot.
Sauternes is one of the few wine regions where infection with noble rot is a frequent occurrence, due to its mesoclimate.

Wine: Best Producers: Sauternes, Bordeaux, France
Sauternes (and its adjoining, though lesser-known neighboring commune, Barsac) is well known for producing one of the world's great sweet white wines.
Located in a rather swampy, muggy flatland to the southwest of Bordeaux, Sauternes has a climate ideal for the formation of a mold, Botrytis Cinerea, that attacks the grapes and shrivels them, thereby concentrating their sugars.
Generally a blend of sauvignon blanc and sémillon, the wines are then aged in oak barrels that impart an overlay of spice and vanilla flavors.

Botrytis cinerea doesn't always develop and, when it does, it's sometimes very late, rewarding only those daring vineyard owners who haven't picked their grapes (but who have risked losing the entire crop due to inclement weather).
The best Sauternes wines come from low-yielding vines that have been hand-picked (some as many as twelve separate times) to ensure that the grapes are not culled before reaching the perfect degree of required ripeness.
The resulting classic Sauternes wine is rich and sweet-the botrytis cinerea contributes a desirable

White Wine reviews Chateau Bastor Lamontagne Sauternes, 2001
Sauternes is arguably the best incarnation of the relatively unpublicized Semillon grape, which alone can be rather drab, but when brought out by the grassy Sauvignon provides a full texture to this sweet wine.
Located in the Preignac commune of Sauternes, in the Bordeaux region of France, I would venture that this is one of the best wines from one of the region’s best vineyards.
Aged for 15 months in oak barriques, the smaller, more upscale version of the usual barrel, the noble rot, or “botrytis” coaxes out the sweetness and acidity of the grapes.
