The Scheimpflug principle is named after Austrian Captain Theodor Scheimpflug and deals with the change of the focus plane when tilting the front standard of a view camera.
When an oblique tangent is extended from the film plane, and another is extended from the lens plane, they meet at a point.
Scheimpflug references the concept in his 1904 British patent GB1196/1904.

Like the Scheimpflug Principle, the Hinge Rule asserts that three planes intersect in one line: The focal plane, the plane parallel to the aperture plane which is one focal length in front of the lens, and the plane parallel to the film plane which goes through the center of the lens.
The Scheimpflug Principle (focal plane, aperture plane, and film plane intersect in one line) and the the Hinge Rule together allow it to determine the focal plane from the focal length of the lense, the film plane, and the aperture plane.

Two basic schemes of laser triangulation sensors used for sensing a mirror surface are analyzed: the first one uses sensors with the photo-registration plane tilted to the optic axis according to the Scheimpflug principle, and the other uses sensors with the plane that is orthogonal to the optic axis.
The conditions of Scheimpflug principle applicability are determined.
It is shown that for a certain ratio of parameters of the optical system to probing light beam, the scheme with an orthogonal registration plane can ensure a smaller level of measurement errors than the scheme with a tilted output plane, despite the presence of defocusing.

Don't know if there's a better method than checking on the ground glass after setting your tilts etc. Part of your trouble is the fact that you're doing macro work and the bellows are extended quite a bit.
This means that it takes a lot of tilt before you establish a Scheimpflug a couple of feet or so off the ground.
The problem is magnified by the fact that you're working very close to the subject, which means tilts change your framing a good bit more than normal.
