  Scotch Ale: Strong and Smooth
Scottish ales called 60 (light), 70 (heavy), or 80 (export) shilling are in the range of 2.5 percent to 5.0 percent ABV.
Historically, most beers produced in Great Britain up to the end of the 18th century would have exhibited a smoky character due to the wood, peat or, later, coke used in drying prior to the development of modern indirect-heated malt kilns.
Classic, distinct beer styles are just that because of their evolution, which can depend on things both serendipitous and intended.

Michael Jackson's Beer Hunter - Scottish island's summer brew beats British 'Belgians' and 'Germans'
In the Arran beer, the tartness imparted by wheat is beautifully combined with yeasty fruitiness (reminiscent in this instance of peaches) and flowery hop character (just a touch of the citric-tasting variety Cascade, grown in Washington State): a beer that is easily drinkable, yet refreshing in its flavors.
Wheat beers are summer quenchers, and that is why the competition is run at this time of year.
The questions of bright beer versus hazy, and cellar temperature versus ice-cold are theological issues among devotees of wheat beer.

 Epinions.com - Take a Peek Under a Scottish Brewer's Kilt...
The styles we now know as scottish ale were developed around the late 18th or early 19th century -- a time during which the brewing industry was transforming itself from a local affair to an industrial enterprise -- much as it was elsewhere in the world.
These are light bodied beers with a soft malty flavor, and with the moderately boosted gravity, the beers sometimes show a little more complexity: maybe a bit of a nutty character or a touch of soft caramel.
I've always thought scottish beers were rather special citizens in the world of beer, and I hope I've given you a little insight into what to expect next time you're browsing around the shelves of your local beer retailer and wondering whether or not to snag a six-pack of that Tartan ale.

Michael Jackson's Beer Hunter - Scottish beer in full flower
It was a famous beer town with at least five breweries at the turn of the century.
The beer begins conventionally enough, with barley malted in Berwick; then the sprigs of heather flowers are added as though they were hops, to impart aroma and dryness.
The beer has a delightfully refractive amber colour, a flowery-fruity bouquet and an almost oily firmness of body with spice and apple notes in its dry, almost wine-like finish.

Beer is still slightly cloudy after lagering, and requires filtering to remove any remaining yeast and other insoluble materials to achieve a brilliant clarity.
A keg of beer is equal to 6.88 cases of beer or 1,984 ounces.
Beer must either be pasteurised or sterile-filtered to protect it from the continued growth of any stray yeast or other beer loving micro-organisms.

Scottish beer has developed in the particular way it has for many reasons, among which are: The distinctive quality of the local Scottish water, a strong barley growing industry both for beer and whisky, and the good trading links with the former British Empire, Northern Europe and North America.
Scotland used to be famous for it's beer, in fact, during the 19th century, Edinburgh ranked alongside places such as Munich, Plzen and Burton-on-Trent in importance as a brewing centre.
Scottish beers are generally more full-bodied, darker, sweeter and maltier than English beers.

The main theme of the exhibition was Faraway Places - Scottish beer exports to the world.
It was during the 18th century that Scottish brewers ventured into the export market, and by 1860 they were exporting to Australia, New Zealand, the Caribbean all over North and South America, India, Mauritius and the Far East.
We even had a bottle of ‘fl beer’ on display, which was ‘temperance beer’ brewed by some brewers, being non-alcoholic or low in alcohol.

A Scottish ale is usually similar to what we think of as a brown ale: amber to dark in color, some roasted notes, and, like English brown ale, very low in hop aroma and bitterness, and a starting gravity somewhere between 1.045 and 1.060.
One of the crucial aspects of Scottish and Scotch ales are the clean maltiness and lack of fruitiness (another characteristic differentiating it with English ales).
Scottish and Scotch ales were traditionally not primed with any sugar, and were not fully conditioned for 6 months or longer.

Scottish Pubs - the history of Scottish Beer - excise duty
This was followed in 1644 with taxes on ale, small beer, strong beer and imported beer ranging from 4d to 1 shilling, with the resulting revenue used to fund the Civil War.
It soon became clear that such a scheme was open to abuse, and in 1647 a system of revenue farming was introduced whereby monies were collected from breweries and public houses by visiting officials.
In 1993, because of the arcane method in which duty was still calculated, brewers were forced to lower the alcohol content of their beer to keep bar prices the same.

Whatever the historical accuracy it’s likely that by the time the Romans arrived in Scotland the locals were already enjoying fermented grain-based brews made from such ingredients as corn weed ('darnel') or coarse barley ('bigg'), and flavoured with heather shoots, rowan berries and bog myrtle.
Other native plants also used in early Scottish beers for bittering were gorse and broom - plants known to intoxicate the sheep that feasted on their green tips and yellow flowers!
Apart from the doubtful qualities of these early beers, the results - not surprisingly - were often harmful and the government intervened.
