The Original Scouse Recipe (aka LOBSCOUSE or LABSKAUSE)
Scouse was brought to Liverpool by Northern European sailors, it was originally called Labskause.
The people who ate Scouse were all generally sailors and their families and eventually all sailors within Liverpool were referred to as Scousers.
Scouse holds a place in the heart of most Liverpudlian's as the taste of their hometown and is still regulary eaten today by a great number of families, including my own.

Language Log: Scouse is getting scouser
Scouse - or to give it its full title, Lobscouse, is of course a food rather than a dialect; it is the native dish of the Liverpudlian, or Scouser.
Scouse is to Liverpool what Bouillabaisse is to Marseilles or Schnitzel is to Vienna.
I'd heard the term "scouse" for the Liverpool dialect, but did not know this etymology, which the OED agrees with, and fans of Patrick O'Brian will be happy to learn about -- if they've previously shared my ignorance of the lobscouse/Liverpool connection, at least.

Firstly here is Fritz Spiegel's explanation of what scouse actually is, from his mini book (pronounced boook!) entitled Lern Yerself Scouse, published by Scouse Press Liverpool 1984 edition, first published in 1965 at the height of the "Mersey Boom" in the music world.
Scouse, unlike most dishes, derived from a place or origin, was born out of abject poverty.
However, we may safely conclude that the origin of Scouse is to be found in some ships galley on the high seas, it matters little which nationality, as sailors had a habit of giving international status to their songs, yarns and certainly, their diseases.

BBC News | Entertainment | Scouse sound going strong
Liverpool's Scouse accent is going strong and far from at risk from extinction, according to leading language experts.
He said Scouse - which evolved from a mix of Irish, Scots, Welsh and Lancashire accents in the late 19th century - now varies greatly between different generations.
If any watering down of the accent was to be found, he added, it was among young professionals who have modified the way they speak for the work place.

BBC - Liverpool - Voices - The origins of Scouse
Speaking with a Scouse accent is a fairly recent trend, up until the mid 19th century Liverpudlians spoke pretty much the same as their Lancastrian neighbours, and traces of the warm Lancashire sound can still be heard in the accent of older residents.
However, Scouse is not king across all of Merseyside, St Helens residents have their own distinctive way of speaking, as do people in Widnes, while Southport and parts of Wirral have more refined versions of Scouse.
The Scouse dialect is still developing, teenagers speak very differently to their grandparents, in part taking bits of Estuary English prevalent on television and radio, and in some ways mimicking the Brookside sound.
