While seitan is itself rather flavorless, it holds a marinade very well and is usually simmered in a dashi (broth) made from soy sauce, kombu, ginger, and sometimes also sesame oil.

Take some (wheat) flour - after all seitan is just gluten, so it's pretty much gotta be wheat.
Like tofu, seitan is pretty flavorless unless you season it, but unlike most tofu, it's got a great chewy texture which is nice for meat eaters (or former meat eaters), and novel for those who do not crave meat.
I've since bought boxes of pure gluten, but have found that if you just mix it with water and knead, the lump of seitan is incredibly dense, and doesn't soak up flavor that well.

I make my own seitan for this recipe and i recommend that you do too, it tastes better and is much much less expensive.
If you use store-bought seitan you may want to use a little less than the 3 1/2 cups called for because it is so expensive.
Add the seitan and saute over medium heat about 25 minutes, until it is dark brown and crispy on the outside.
