Early in the viticultural development of Australia, semillon (often incorrectly labeled as Riesling) dominated as the major white variety, although the vineyards are mostly Chardonnay and sauvignon blanc today.
Most California Semillon today is blended with Sauvignon Blanc and rendered dry, but an experimental dessert wine created a sensation in the middle of the 20th Century.
Semillon is the soft, subtle, rich Yin to balance the Yang of Sauvignon Blanc, which can be aromatically aggressive and acidic.

Apart from the Pegasus Bay, no New Zealand Semillon I've ever had has reminded me of any from Australia and that is probably there is quite a contrast in climate the areas where Semillon is grown.
We grow Semillon in Gisborne and though it is rarely made into a single variety dry white wine, Montana Wines made a good one about four years ago.
The acidity in the wine cuts through the fattiness of the cream, the green characters in the wine are in harmony with the flavours of garlic, feta and peas while the wine's creaminess goes with the dish as a whole.

Outside of France the Semillon has never made large inroads in new plantings, for the most part it's been planted only in small parcels for blending purposes.
Here the style is dry table wines, and these Semillon wines age remarkably well in the bottle, ageing slowly into complex and lush wines.
Outside of the Hunter Valley the Semillon is also fairly well planted, but it's most frequently encountered when blended with the Sauvignon Blanc, just as in the traditional Bordeaux blend.

The Moss Wood team were determined that this wouldn’t be repeated in 2005 and so, although the cropping was not heavy, thanks to the consistency of the weather in the build up to vintage, the vines were crop thinned.
