The sepoys did not seek to revive small kingdoms in their regions, instead they repeatedly proclaimed a "country-wide rule" of the Moghuls and vowed to drive out the British from "India", as they knew it then.
The sepoys rejected this concept of a new drill, pointing out that that they might very well forget and bite the cartridge, not surprising given the extensive drilling that 19th century soldiers received in loading and firing their muskets.
The sepoys knew it was very likely that they would also be asked to use the new cartridges and they too would have to refuse in order to save their caste, religion and social status.

  Sepoy Rebellion: 1857
One of the most well-known uprisings during the British colonization of India was a mutiny of the native troops known as "sepoys".
When it began on Sunday, May 10, 1857 the Sepoy rebellion was a complete surprise to the British, many of whom were "blind to the unrest that had been created, in part, by the rapid imposition of direct British control over two-thirds of India" [1].
The Indian units were called "native sepoys" and soon became the largest part of the British forces in India, eventually outnumbering European troops ten to one [3].

The Indian Mutiny (also known as the Sepoy Mutiny) as known to the British or The First War Of Indian Independence as known to the Indians was a period of uprising and rebellions in northern and central India against British rule in 1857-1858.
Sepoys were native Indian soldiers serving in the army of the East India Company under British NCOs and officers trained in the company's own military school in England.
In June, sepoys under General Wheeler in Kanpur rebelled - apparently with tacit approval of Nana Sahib - and besieged the European entrenchment.

 Indian rebellion of 1857 Summary
The Mutiny or Sepoy rebellion (1857–1858), or, as it is often referred to in contemporary India or Pakistan, the War for Indpendence, changed the shape of the British empire.
Sepoys throughout India were issued with a new rifle, the Pattern of 1853 Enfield Percussion cap rifled musket - a vastly more powerful and accurate weapon than the old smoothbore Brown Bess they had been using for the last several decades.
The sepoys rejected this concept of a new drill, pointing out that that they might very well forget and bite the cartridge, not surprising given the extensive drilling that 19th century soldiers received in loading and firing their muskets.

Mutiny by the sepoys under the employ of the British East India Company’s army started occurring in relatively smaller scales as far back as 1764.
As a mutiny in itself, leading to such a serious threat, this incident seems to have received less coverage by British historians and is not reported with the sensationalism associated with the sepoy mutinies.
The causes that lead to the first sepoy mutiny in 1764 and the location of the incident (Patna according to one Indian source) in the presidency does not seem to be clear, but the style of punishment lashed out to the 24 Indian ringleaders reflected facets of British civilisation.

Contemporary Perspectives of The Sepoy Mutiny
After all the ultimate result of the Mutiny by the sepoys was a relinquishing of the control of India by the East India Company and an official setting of this jewel into the crown.
Times’s initial reporting of the Mutiny was actually a response to a suggestion in the French press that India was revolting against British rule (Kevin Hobson, “The British Press; The Indian Mutiny” [http://www.edunltd.com/empire/article/mutinypress.htm (2/20/00)], 1).
