  MadeiraWineGuide: Grape Varieties
Sercial was not grown very much after Phylloxera, but the number of vineyards with Sercial is growing again.
To obtain a maximum aroma as a counterpart, Sercial is harvested as the last of the grapes, often as late as the beginning of October.
Sercial has to mature for a long time, before it is drinkable.

An introduction to the Sercial cultivar on Madeira
In the sixteenth century the Continental Portuguese also grew Sercial wine - but it was known as the "Esgana Cão" (bitter-enough-to-choke-a-dog wine) because of its high level of acidity.
But the madeiran soils did wonders to this vine, it cropped the acidity and engendered the fresh succulent dry palette that it has become famous for.

International Recipes: Food and Wine Dictionary: Sercial
Although originally associated with the Sercial grape, a lot of Tinta Negra Mole has been used in this style of Madeira in the recent past (especially in the cheaper versions).
However, in 1986 Portugal entered the Common Market, whose regulations required that by 1993 any Madeira wine naming a variety on its label must contain at least 85 percent of that grape.
This labeling requirement caused an upsurge in replanting the classic vines such as Sercial.

 MadeiraWineGuide: May 2006 Archives
This sounds like a paradox, but since the aromas are not backed up by sweetness, these grapes simply have to get as much sun as possible for the development of their aromas.
In this way the resulting wine will be sweet or dry, depending on when the fermentation of the grape's sugar was stopped, but all the wines will have high alcohol content.
The contents are no longer drinkable, since these blends where not intended for a long storage and some of the bottles had been in the window of the shop, being exposed to the sun.

DRY - As far as wine is concerned, the opposite of sweet is not sour, but dry; and even an extremely dry wine is no more necessarily sour than unsugared coffee is sour.
Practically all of the widely used table wines of the world are dry rather than sweet, as are many aperitif wines such as Fino, Amontillado Sherry, Sercial and Rainwater Madiera as well as some Marsalas.
A cocktail is an aperitif, so is Sherry, so is a glass of Champagne or white wine, if so consumed.
