Shako is a homonym for a car garage, so oyajis think it's really funny to call shako "Garage/gare-ji"...
I can't remember if I've had shako at Ino Sushi in the past 6 years, but definitely have had it at Sushi Tomi in Mountain View and Sushi Sam's in San Mateo (which seems to have it every year).
Both places where I've had shako served it as already cooked, served a little bit colder than room temperature, and brushed with nitsume or is the right word tare.

I have played Shako Seven Years War and have found the rules to be the most enjoyable Seven Years War rules that I have played.
Just one specific criticism of Shako (admitting that troop ratings and a few melee modifiers ought to be tweaked, true of any game) is that one side sits passive while the other moves, then roles are reversed, even for cavalry being charged.
When cav charges other cav, there should be a countercharge (unless there's reason not to) and a penalty for hit at the halt, otherwise cavalry can hold ground as well as infantry.

I have a felt and leather shako made for the "Price of Freedom" movie which is about 7 1/2" tall.
Besides the Hero of Tampico painting, I really don't know of any other illustration of an 1836 Mexican shako, and there are no surviving examples that I know of.

 Pre-war shako pompoms - Authentic Campaigner Website & Forums
When we recently reproduced the shakos for the St Louis Grey's Impression.
As a bit of background (should have posted this initially, methinks...): The pompom is for the shako worn by the Essex Sharp Shooters (from Essex Co., Virginia), which became Co. F, 55th Virginia Inf.
We have not yet located an image of a member wearing the shako, so we have no way of knowing the actual shape of the pompom (flame/teardrop, exclamation point [gradually widening toward the top], etc.).
