The location on the throat on which Shechitah is performed is the area between the larynx and the lower part of the trachea and the esophagus.
The Shechitah process starts out with the inspection of the slaughtering knife, the Chalaf, which must be entirely free of any nicks or blemishes which might tear the animal’s skin and thereby invalidate the Shechitah.
One of the arguments leveled against Shechitah by its opponents is that it is not described anywhere in the Torah and it is an invention of the Rabbis.

The Rema -- unlike the Shulchan Aruch -- appears to rule that a shechitah knife does require tevillah (albeit without a brachah) as it is used at a stage where the food is not fit for consumption.
Apparently a shechitah knife is considered to have no use, aside from its use as a shechitah knife and is therefore considered to be muktzah.

He brought a proof from Berachos 31b that the Kohanim were unaware of the fact that Shechitah is Kosher by a Zar.
However, the Ritva in Yoma 25a says that even though Shechitah is Kosher by a Zar, nevertheless it is a Mitzvah for a Kohen to do it.

Perhaps Rashi means that the Shechitah is valid b'Di'eved because we are concerned that the Shochet will examine the Simanim *in the dark,* and he will not do a thorough examination of the Simanim.
While Shechitah needs to be done during daylight or with a bright torch, one may examine the Simanim by holding a candle next to the area of the cut Simanim.

Hence, even if we assume that an animal eventually feels the pain of being cut, it is reasonable to assume that the centers of pain-sensation in the brain stop functioning due to lack of oxygen before the feeling of pain reaches them.
