In the News (Fri 1 Jan 10)

Shichimi - Wikipedia, the free encyclopedia
"seven flavor chile pepper") or simply shichimi, is a common Japanese spice mixture containing seven ingredients.
Some rice products such as rice cakes, agemochi and roasted rice crackers also use it for seasoning.
Shichimi should be distinguished from ichimi tōgarashi, which is simply ground red chile pepper.

Togarashi condiments pepper up Japanese cuisine - The Honolulu Advertiser - Hawaii's Newspaper
Shichimi or ichimi togarashi is common in island homes and casual Japanese restaurants.
The sharp, hottish flavor and slightly gritty texture of the togarashi mixtures is seen as a great contrast to fatty and fried foods such as unagi (eel), tempura (batter-fried foods) or shabu shabu (meats and other ingredients cooked in bubbling rich broth).
Shichimi is also called "seven spice" because shichi is seven in Japanese, and seven ingredients are generally used.

The full name for this seasoning is shichimi togarashi, which translates to seven-flavor chili, Richard Hosking writes in his book A Dictionary of Japanese Food.
Like salt and pepper in the West, shichimi is found on the table at many restaurants, usually stored in a gourd with a tassel around it.
Citing shichimi as evidence, some Japanese food historians have argued that while Westerners spice their food at the stove, Asians do so at the table.
