Topic: Shish kebab

  CNN.com - Food Central - Recipes - The ultimate shish kebab - September 4, 2000
Subsequent generations have brought countless refinements to the art of the shish kebab: the yogurt marinades of Afghanistan and Iran, the olive oil basting mixtures of Turkey and Greece, the extravagant spicing of India, and the colorful vegetables of the Middle East.
The truth is that shish kebab can be as simple as chunks of meat on a skewer or as elaborate as the colorful brochettes served at Greek restaurants on the Rue Mouffetard in Paris.
Shish kebab is generally made from one of two cuts of lamb: the leg or the shoulder.

Kebab - Wikipedia, the free encyclopedia
Döner kebab, literally "rotating meat" in Turkish, is sliced lamb or chicken loaf which is slowly roasted on a vertical rotating spit.
Kebabs contain a variety of food groups: they have bread (cereals group), cabbage and lettuce (vegetables group), tomatoes (fruit group), creamy herb sauce (dairy group), oil (fat group), not to mention the döner meat (meat group); though one might consider the meat and vegetable groups misbalanced.
Shish kebab (şiş kebap in Turkish) is a wooden or metal stick (a skewer in Turkish) with small cubes of any kind of meat, fowl, fish, fruit, or vegetable (usually a combination) which is roasted on a grill.

 The Real Turkish Shish Kebab
Shish kebab is Turkey’s most celebrated kebab (although the average Turk eats it far less often than ground lamb kebabs).
Contrary to American versions of the dish, Turkish shish kebab rarely comes with vegetables on the same skewer as the meat.
Oil the grill grate, then arrange all the kebabs on the hot grate, and grill, turning with tongs, until the skins on the vegetables are blistered and browned and the lamb is browned and done to taste, 8 to 12 minutes in all) for well-done.

Hormel Foods - Glossary - Shish Kebab
Several Turkish words were the origin of the term Shish Kabob, using the word "sis" meaning skewer and "kebap" meaning roasted meat to create the term that is commonly used to refer to this food dish.
The two words are often shortened to only Kabob or Kebab when referreing to this preparation of skewered meat.
The meat for the Shish Kebob may be marinated prior to cooking and then pushed onto the skewers or placed into the grill basket, alternating the cubes of meat with pieces of vegetables, such as bell peppers, onions, mushrooms, and tomatoes.
