PURPOSE:Steamed rice is combined with a powder of tea and converted into KOJI (malted rice), thus the fermentation mash is prevented from being contaminated with other microorganisms to give a KOJI that can form tea ''SHOUCHU'' of good and unique taste in high alcohol yield.
The amount of tea powder is about 2-30wt%, preferably 5- 15wt% based on the rice in general.
The process for making tes ''SHOUCHU'' is basically same as the usual fermentation process for making ''SHOUCHU''.

Even though Shouchu distillery wastewater is a typical seasonal campaign wastewater, the process shows superior capability in re-starting up.
