Sidamo is a growing region located in the south, the coffee plant varietal produced in this region is longberry.
The Sidamo region is the southern most producing region bordering Kenya, where the great lift system lifts the north eastern plateau above 500O ft. Some of the coffee grown in Ethiopia is still gathered from wild trees growing in the forest.

 The Coffees of Ethiopia
Notes: Wet-processed Sidamo is a coffee we usually don't stock: it is similar in the cup to Ethiopia Yirgacheffe, another wet-process coffee, and often cups out as a lesser cousin.
The irony is this: Sidamo is a major coffee growing region in southern Ethiopia and Yirgacheffe is a small sub-region centered around a village of the same name.
The fact is, wet-processed Sidamo is a pain, and simply confuses people used to the dry-processed Sidamo (totally different in the cup) and the Yirgs.

Metathesis is a regular phonological process in Sidamo.
In Rice's proposed model of feature organization, the structural representation of the more sonorous nasal consonant is more complex than that of the obstruent: the nasal has an SV node linked to the Root node, while an obstruent lacks an SV node.
It is proposed that metathesis in Sidamo is motivated by an ill-formed structural relationship between the rhyme and onset consonant: the right-hand segment must not be more sonorous than the preceding consonant.
