The name was originally given to vegetable products of this nature, in which the other part of the molecule was, in the greater number of cases, an aromatic aldehydic or phenolic compound (exceptions are sinigrin and jalapin or scammonin).
Ethylene Derivatives. These are generally mustard oils, and are characterized by a burning taste; their principal occurrence is in mustard and Tropaeolum seeds.

One generation of selection was undertaken to produce families with high or low levels of a structural (trichomes) and a chemical (sinigrin) defense, in all four combinations.
Sinigrin concentration and trichome density had strong negative effects on early season generalist herbivory, and sinigrin also increased seedling survival.
Increased sinigrin concentrations were selected for in the generalist present treatments, but selected against in the specialist only treatment.

Effects of dietary sinigrin or indole-3-carbinol on O6-methylguanine-DNA-transmethylase activity and 4-(methylnitrosamino)-1-(3-pyridyl)-1-butanone-induced DNA methylation and tumorigenicity in F344 rats.
The effects of dietary sinigrin and indole-3-carbinol (I3C) on DNA methylation and O6-methylguanine--DNA-transmethylase activity, factors which may be of importance in the induction of tumorigenicity by the tobacco-specific nitrosamine 4-(methylnitrosamino)-1-(3-pyridyl)-1-butanone (NNK), were investigated.
These results suggested that dietary sinigrin might reduce the incidence of NNK-induced hepatic tumors with no effect on NNK tumorigenesis of the lung and nasal cavity, whereas I3C might increase hepatic tumor incidence and reduce NNK tumorigenesis of the lung and nasal cavity.

Sinigrin should be scary as it breaks down to form an insect-killing chemical weapon in the plant.
For humans, though, there is only one nasty side-effect, because this breakdown product is responsible for the sprout's pungency - both on the stem and after the meal.
The IFR researchers, however, have found that sinigrin is more than a party pooper.

IFR Information Sheet - why your best friend could be a brassica   (Site not responding. Last check: 2007-11-02)
The breakdown product of sinigrin, allyl isothiocyanate, responsible for the characteristic smell of sprouts, is the active ingredient.
It works by persuading the pre-cancerous cells to commit suicide - a natural process called apoptosis - and so powerful is the effect that we think that the occasional meal of sprouts could destroy these cells in the colon.
There is an upper limit too; if levels of sinigrin in the plant rise above 200 milligrams per 100 grams of fresh vegetable, the sprouts become so bitter no-one will eat them.

Real Wasabi   (Site not responding. Last check: 2007-11-02)
A member of the brassicae family, Wasabia Japonica owes both its pungency and healthful benefits to a suite of isothiocyanates that occur due to enzymatic activation when the plant tissues are crushed during grating.
Two glucosinolates, sinigrin and glucocochlearin are especially important in wasabi.
While both are essentially tasteless compounds on their own, when exposed to the myrosinase enzyme (also present in wasabi in separate plant cells), hydrolosis transmutes these sulfur compounds into pungent allyl isothiocyanate (CH2=CH-CH2-NCS) and sec-butyl isothiocyanate (CH3-CH2-CH(CH3)-NCS), respectively.

Our previous work has analyzed the differences in sinigrin content in young leaves of Alliaria petiolata in native and invasive populations and found significantly higher concentrations of sinigrin in leaves from the invasive populations in some cases.
However, these differences in sinigrin content were strongly correlated with plant size, which is dependent on resource availability, and also appear to be variable depending on year and plant life stage.
We tested whether ecotypic or genetic differentiation for sinigrin content and growth is detectable in common environments using two common garden experiments, one in the native range (Switzerland) and one in the invasive range (Massachusetts).

Amazingly after 3 days sprouting, the compound Sulforaphane is between 10-100 times more concentrated in sprouting seed than in the mature vegetable - and it s a powerful blocking agent against cancer.

It is believed it has so powerful an effect that the occasional meal of young broccoli sprouts may destroy cancerous cells in the colon.
