A sleeper ship is a late 20th to early 21st century Earth space vessel in which the crew could be placed into suspended animation for all or part of the journey.
The term "sleeper ship" was only ever explicitly applied to the SS Botany Bay, although it is possible that DY-500 class ships could also be called this.
Other ships that utilized stasis chambers (a technology apparently broadly synonymous with "suspended animation" in VOY: "One"), such as the Klingon ship the T'Ong in TNG: "The Emissary", were not referred to by that term.

DY-100 class ships were also known to be used as a way of escaping the aftermath of Earth's Eugenic wars.
All DY-100 ships were retired in the early 21th century with improvements in sublight technology.

Suspended animation is also useful in reducing consumption of life support resources by crewmembers who aren't needed during the trip, and for this reason sleeper ships sometimes also make an appearance in the context of purely interplanetary travel.
In 2001: A Space Odyssey, for example, a ship travels to Jupiter (Saturn, in the book) with most of its crew in suspended animation and only a handful remaining awake to operate the spacecraft.

Khan christened the ship Botany Bay, naming it after Australia's first European settlement, a British penal colony who's exiled inhabitants would be the first to begin the conquest of the continent.
Although the DY-100 prototype herself was lost to her constructors, more of this class of ship would be built and used to explore the Sol System, despite the majority of Earth's population having been kept in the dark about their discoveries for many decades.
