SOBA - Food - Dining Reviews - Pittsburgh City Paper - Pittsburgh
Soba -- and its sister restaurant Umi -- re-opened last month after a fire last spring put both places on the disabled list.
(Soba's newly expanded lounge is still under construction and is expected to open later this month.) In the year that Soba's been on hiatus, a couple of sleek Asian restaurants have opened nearby, but Soba -- now with its decidedly adventurous and quirky Pan-Asian menu -- can only benefit from Pittsburgh's expanding palates.
Soba's interior seems darker than ever, but it's not an unpleasant darkness; it manages to be sleek but not confining.

Soba achieved some notoriety from the Western media during the war thanks to his skill as a painter and musician combined with the fact that he was fighting in the war.
At times Soba seems just like anyone else, but his observations on the war and what it is doing to his country show depth beyond his ratty hair and partying lifestyle.
Soba talks about how the war changed him, but how he doesn't let it corrupt who he is. Sacco captures that defiance and determination, but explores all other options as well.

And that’s what SoBA is really about—valuing quality and reclaiming pride in what we as a culture create Plus, Huguley adds, baby boomers, who now are in a position to fund such a project, are the last generation who actually grew up in solid, well-built homes.
All along he volunteered with SoBA: “First John Pal Huguley asked me to research how the jail windows were originally constructed, than it turned into ‘could you build a mock-up’ and finally it escalated into ‘how about building all the windows?’” he laughs.

Those noodles were excellent: The udon noodles, made from wheat flour and resembling familiar Italian pasta, as light and springy as could be; the soba noodles, made from heartier, dark brown, purple-tinged buckwheat flour, chewy and resilient.
From the combinations I tried, I can particularly recommend the vegetable tempura with soba noodles ($7.50) since the frothy, fried cap of sweet onions contrasted beautifully with the iron-tasting noodles and salty broth; and also the wild mushroom udon ($7), as the mushrooms are the perfect foil for the tender udon noodles.
I was less happy with the beef noodle dishes ($7), since I found the soup--which bears a family resemblance to sweet and salty sukiyaki--to be too salty, though a liberal addition of shichimi, the seven-spice red-chili-based spice mixture served to every table, gave it a new dimension.
