As the cuff pressure is gradually released, the first spurt of blood passing through the artery beneath the cuff exceeds critical velocity in the partially constricted artery and produces turbulent blood flow which results in sound.
The tapping sound is probably produced by the sudden distention of the walls of the collapsed artery.
The intensity of the tap appears to be related to the forcefulness of the distending stream of blood which, in turn, depends on the speed of rise of the arterial pressure and amount of blood flow.

A worthy addition to this underrated series, Volume 3 continues Sounds and Pressure's tradition of finding examples of rock steady, roots, dub, and instrumentals that weren't necessarily the biggest hits back in the day, but that are no less stellar embodiments of the great sound of the golden age of Jamaican music.
A "version" of the tune closes the album, but it adds little and sounds basically the same as the original.
I would've preferred a little more material on Sounds and Pressure Volume 3 -- effectively there's only 9 songs -- but I suppose short and sweet is better than long and sour.

Brimming with strong melodies, innovative music, and emotional vocals, Sounds and Pressure Volume 4 packages together tunes that may not be as well-known as others, but which are just as classic in their own right.
The best song here in my mind is Derrick Harriott's "Slave." At once both folksy and funky, this bouncing track manages the rare feat of not having the stereotypical reggae sound.
