The New Zealand region of Canterbury is mainly composed of the Canterbury Plains and the surrounding mountains.
The area is commonly divided into North Canterbury (north of the Rakaia River), Mid Canterbury (from the Rakaia River to the Rangitata River) and South Canterbury (south of the Rangitata River).
The Canterbury Province was formed in 1853 following the passage of the New Zealand Constitution Act 1852 from the part of New Munster and covered both the east and west coasts of the South Island of New Zealand.

A new boiler house was erected with the land mark chimney stack a new bottling house of two levels behind the office, and a new keg and tank storage building of brick which replaced the old wooden storage shed and malt house.
The South Canterbury Wine and Spirit Co were a Ballins operation, which was part of the tandem deal between Ballins and N.Z.B. had a share in the business, which distributed wines and spirits as well as manufacturing soft drinks under the Ballins label.

George came to New Zealand with his parents on the ship 'Gypsy' which arrived in 1854 at Nelson, at aged 16 he assisted his father in the management of the Collingwood St Brewery in Nelson.
On January 23, 1874 it was announced that a new title was in use for the Alton Brewery [fig 15].
If Hansen's South Canterbury Brewery was in the Old Phoenix Brewery (on the corner), perhaps Hole used the old malt houses further east on Browne St. for his brewing.
