Lo spumante viene fatto su una cuveè di due uve, chardonnay e pinot nero, raccolte in periodi diversi perché hanno momenti di maturazione diversi.
Per lo Spumante Riserva invece, che viene tenuto molto di più sui lieviti in affinamento, la proporzione chardonnay – pinot nero cambia.
