 Reference.com/Encyclopedia/Squash (fruit)
Squashes are four species of the genus Cucurbita, also called pumpkins and marrows depending on variety or the nationality of the speaker.
Summer squashes, including young vegetable marrows (such as zucchini known as courgette, pattypan and yellow crookneck) are harvested during the summer, while the skin is still tender and the fruit relatively small.
Winter squashes (such as hubbard, Buttercup squash, acorn, vegetable spaghetti and pumpkin) are harvested at the end of summer, generally cured to further harden the skin, and stored in a cool place for eating later.

Growing Winter Squash | Farm & Garden
Winter squash are mature when the stems connecting the fruit to the vine begin to shrivel.
After harvesting, cure the winter squash (except for the acorn types) at a temperature of 80° to 85° and a relative humidity of 80% to 85%.
After 1 or 2 fruits have set on a single vine, the vine should be cut back to within a foot of the last fruit to encourage production of the winter squash fruit.

One of the sweetest vegetables of all, butternut squash's velvety, orange flesh tastes great when roasted and dressed with little more than a bit of salt, pepper, and olive oil or butter.
The round part at the bottom of the butternut squash is hollow and full of seeds, so look for one that's top-heavy and free of blemishes.
