Beer was and is made through the "mashing" of malted barley - a starch to sugar (maltose) conversion process - with the resultant sugars extracted from the grain through an infusion process known as "sparging." This produces a diluted "malt extract" which is then fermented with specific yeasts to produce beer (Papazian 1991).

The clamminess outside made stout the obvious choice.
Featuring a green label with a 19th century clipper cutting across the waves, yet made in land locked Norwalk Connecticut, I had to wonder about the sincerity of this beer.
This was a lovely stout, a light, sweet, almost porter-like beer, with a heavy roasted scent and an oat-laden taste.
