  Factsulphites
Sulphites are still used as processed meats such as sausages in most English and Spanish speaking countries except the USA.
The use of sulphites in fruit and vegetables became common with the growth of the processed food industry in the USA in the twentieth century.
Sulphites destroy thiamine (Vitamin B1) so the general idea is that foods which are a significant source of thiamine, such as meats, dairy foods and cereals should not be treated with sulphites.

 Sulphite Facts: Wine Cave Inc.
They insisted on sulphites because sulphite treated wines were the only ones that survived a long sea voyage without turning into vinegar.
Sulphites are produced by all grape based wines naturally during fermentation, up to a level of about 10 PPM.
The upshot of sulphite use is this: without sulphites you'd have to be very careful to keep all of your equipment sanitary and you'd still have to drink your wine quickly, before it spoiled, probably within one or two months.

 Sulphite oxidase family
Enzymes of the sulphite oxidase family contain a molybdenum cofactor (Moco) and catalyse reactions that involve the oxygen atom transfer to or from an available electron lone pair of a substrate (1, 2).
Sulphite oxidase catalyses the oxidation of sulphite to sulphate (1), with ferricytochrome c as physiological electron acceptor.
Adjacent to the water/hydroxo ligand, a bound molecule of sulphate or sulphite was observed.

The sulphite challenge dose was approximately equivalent to that used in 250 mls of a common sulphite containing soft-drink.
A sulphite sensitive nurse developed acute bronchospasm walking into a room where patients were being nebulized with a sulphite preserved bronchodilator.
A variability of response occurs among sensitive patients depending on their degree of sensitivity to the sulphites and whether the sulphite is in a bound or unbound form.

Patent 5354647: Bleach-fixers with excess sulphite
The invention is characterized in that the soluble sulphite is present in an excess of the amount required for stabilization whereby the sulphite can be sacrificially destroyed by oxidizing agents in use thereby to neutralize the oxidizing effects upon the thiosulphate.
a soluble sulphite in an amount in excess of the amount required for stabilization of said bleach-fix agent, whereby the sulphite reacts with oxidizing components of the developer in use thereby to neutralize said developer's effects upon the thiosulphate.
a soluble sulphite for stabilization of the thiosulphate against decomposition, wherein said soluble sulphite is present in a concentration in excess of that amount required for stabilization of said bleach-fix agent thereby to protect the thiosulphate by sacrificial oxidation of said excess of said sulphite by carried over oxidizing components from said developer.

The distinction between free and bound sulphite is explained, and reversible binding of the additive in beverages and dehydrated foods is discussed with reference to simple theory of chemical equilibrium.
It is suggested that the large effect of sulphite ion is due to its high nucleophilicity; esters and lactones in food could become less stable in the presence of sulphite species.

All three have been shown to lack the sulphite oxidase protein, but in one case this appears to be secondary to a defect in synthesis of the molybdenum cofactor.
Sulphite oxidase deficiency has been produced in the rat by administration of high levels of tungsten.
Sulphite oxidase-deficient animals are particularly susceptible to the toxic effects of sulphite and atmospheric sulphur dioxide.

 Factasthma
She didn't know that asthma can be associated with sulphur dioxide and other sulphite preservatives (220-228) used in a wide range of common foods, including dried fruit.
Sulphites (preservatives 220-228) are widely acknowledged as the food additives most likely to affect asthmatics.
If cutting down on sulphites isn't enough, the best way to find out exactly which food chemicals are associated with your asthma is to do a trial of the Royal Prince Alfred Hospital elimination (failsafe) diet with challenges, supervised by an experienced dietitian.

Sulphite oxidation and sulphur trioxide radical formation were studied in polymorphonuclear leukocytes (PMNs) isolated from healthy young, old and centenarian donors and from patients with Down's syndrome.
The intensity of adduct formation was most intense in cells with low sulphite oxidase activity, while a mixture of the adduct and of DMPO hydroxyl radical was mainly observed in cells with high sulphite oxidase activity.
Sulphite oxidase activity in cells isolated from healthy young and old donors was positive correlated with both rates of sulphur trioxide radical formation and sulphite oxidation to sulphate, respectively.

Pepper Fogging   (Site not responding. Last check: 2007-11-05)
This appears to arise because the preservative (usually sodium sulphite) and restrainer (potassium bromide), assumed present in the stock developer, are diluted down beyond the maker's intended concentration in order to get contones from lith paper.
The cure is to add sodium sulphite to the working solution, either on its own, or in combination with potassium bromide.
This will vary according to which developer you use, how much you dilute it, and how much the sodium sulphite you use has "gone off" (anhydrous sulphite forms a layer of carbonate and sulphate on exposure to air, which is non-harmful to the process).

News of the Partington process of making sulphite pulp had come to the notice of William Chisholm, a lumber manufacturer of Halifax, and he resolved to test out its possibilities by building a mill on the East River of Sheet Harbour, a mile downstream from his lumber mill.
During the operation of the sulphite mill, the water supply was insufficient to operate the Mill, located immediately north of the Lions' Club Hall today.
Between his sawmill and the sulphite pulp mill, a trolley track was laid on the North side of the East River.

Imitation Parchment Paper, Scientific American 1909
Most of the artificial or imitation parchment papers are made from sulphite cellulose, or pulp, with additions of glue and sulphate of alumina, the sulphite cellulose made according to Mitcherlisch's process, owing to its long, strong fibers, being best adapted for the purpose.
Other manufacturers use a mixture of sulphite cellulose and straw pulp, also sized; others again use sulphite cellulose without size, but add a little sulphuric acid in the Holland engine.
The paper made from second quality sulphite cellulose is of coarse appearance, but is very much like parchment.

Boiler Water Oxygen Scavengers: Sulphite Tannin DEHA Carbohydrazide
The use of condensate is preferable for heating the feed tank rather than a steam sparge or external heat source, because it is a recycled heat source and so helps to conserve energy and reduce operating costs.
Advantages to the use of sulphite are that the higher the feed water temperature the less sulphite is required, its low cost and it is colourless as a product.
One disadvantage is that sulphite adds to the 'dissolved solids' and so leads to more system 'blowdowns'.

Pepper Fogging on Sterling Lith Paper
Now that the cause is known, the cure is obvious, simply add a little extra sodium sulphite to the working solution of the developer.
Potassium bromide also helps to inhibit pepper fogging and can be added in conjunction with sodium sulphite although this must be done with caution as bromide builds up in the developer throughout development anyway.
This should provide enough sulphite and bromide to resist breakthrough pepper fogging at this dilution and maintain a degree of consistency over a reasonable print run.

Get help making your wine! The Wine Computer Website...
This is one of the reasons why commercial wine producers carefully measure the amount of sulphite present during several steps of the winemaking process.
The advantage of this method is that the amount of sulphite that ends up in the wine is fairly small and the entire surface of every grape has been exposed to the sulphite rather than the sulfite being dispersed into a large volume of must after crushing.
The sulphite tool makes predictions regarding the possibility of malolactic fermentation based on amounts of sulphite added provided that a pH reading is available.
