Symphonic metal is a term used to describe metal music that has symphonic elements; that is, elements that sound similar to a classical symphony.
Symphonic metal as a genre (sometimes called opera metal or plainly symphonic metal) is generally the same in the way it sounds between bands, because the genre is pretty typical of itself and the features it uses and easily depicts between itself and other genres.
The first origins of symphonic metal as a genre begins with early bands in the death metal and gothic metal genres, which made some use of symphonic elements in their music.

The fl metal passages are mid-paced toward the beginning of the CD, though they speed up toward the end, and they are aggressive, catchy and filled with cool riffs, with tons of melody from the keys and strings.
This is a symphonic gothic fl metal opera, dark and evil, filled with vampires (and their victims), filled with a lust and smoldering eroticism that can never really be satisfied.
The integration of their aggressive metal and beautiful choral / symphonic arrangements is even smoother, so the overall effect is one of hair-raising excitement and drama, with thundering drums and bass and crunchy, down-tuned riffs, all blended perfectly with soaring synths and their chick choir.

This is in fact a symphonic rock release with often some metal bass making some people, including the group, to categorize it under progressive metal or who knows symphometal, but the ideas, structures and so on are mostly very much more like symphonic rock.
The last larger composition in 5 parts is a symphonic rock piece with more melodic and rhythmic changes, obvious in classical music, varying from true classical to other influences from rock.
Sometimes the compositions are almost symphonic, at times in a rather gothic way, or influenced by symphonic metal with somewhat more of a progressive rock direction.

There is crunchy, key-driven symphonic metal, and fast, heavy, lightly complex, slightly catchy fl metal, along with fast, heavy, melodic, majestic, neo-classical power metal with harpsichord and strings, as well as fast, crunchy, guitar-driven lightly complex power metal with hard rocking riffs; there is even a touch of 50s ballads here and there.
This is symphonic death metal with unusually deep death vocals and female choir vocals.
It is similar in style to Lake of Sorrow, their CD before this — very dense, heavy, symphonic gothic metal with an outstanding and quite progressive mix of aggressive guitars / drums and hauntingly beautiful keys and lead violin, with soprano female and extremely harsh fl and death vox.

Unexpect was formed in Quebec, this band combines elements of fl, death, core, progressive and melodic metal ; classical, operatic, medieval, electro, ambient, psychotic, noise and circus music with an occasional jazzy touch.
This song involves extreme metal interchanged with classical music and an overall obscurity that comes with the music.
Then out of absolutely nowhere, there is some traditional melodic death metal, and i mean absolutely out of nowhere and from this they go into an acoustic part.

Dimmu borgir is Black Metal, it is just that they mix the syles of more modern fl metal like Arch enemy with the roots of fl metal which is a extreamly melodic, symphonic, style of music with some heavy things like vocals and guitars thrown in.
I do agree that they do not seem like fl metal when compaired to emperor or gorgoroth due to their lack of some of the death metal tendancies of those bands.
there may be the more deathy fl metal like mayhem and bothory, and there are more symphonic fl metal like dimmu borgir, and even a more light rock based style like satyricon.
