Taco - Wikipedia, the free encyclopedia
A taco is a traditional Mexican dish comprised of a rolled or folded, pliable maize tortilla filled with an edible substance, while meat (generally grilled beef, picadillo, fish, chicken or pork) is most common, there are numerous regional and personal variations on the theme of taco fillings, including vegetables, cheeses, fungus, seafood, or even insects.
In the variant known as the taco dorado (fried taco), flauta (Flute in English, because of the shape), or taquitos, the tortilla is filled with pre-cooked chicken or barbacoa, rolled into a cylinder and deep-fried until crisp.

Tacos are either a morning treat or a nighttime snack, pretty much disappearing between the hours of noon and six p.m.
The filling for these tacos is traditionally prepared by wrapping sheep, lamb or goat meat in maguey leaf linings, called pencas, placing it over a pan to catch the juices which help steam the meat, and burying it in a fire pit in the ground, something like an underground oven.

For this design/build project, the tribe’s architectural firm, Springer Group Architects, convinced college officials that a Taco LoadMatch hydronic system wouldn’t cost much more than the all-air system they originally called for, and would be more comfortable and reliable in its delivery of BTUs within the two-story building through the cold Montana winters.
Considering the severity of Montana winters, however, a system had to be designed to handle minus 30º days and nights, and Springer Group Architects, working with design engineering firm Three Rivers Engineering, didn’t feel that gas-fired furnaces would be sufficient or meet minimum code standards for ventilation.
