Taiyaki (鯛焼き) literally "fried sea bream," is a Japanese fish-shaped cake.
Taiyaki is made using taiyaki or regular pancake or waffle batter.
Taiyaki can be found all over Japan in a food court or especially at a matsuri (祭), or Japanese festival.

One thing I can tell you about taiyaki is that the red bean filling is made from azuki beans boiled and added to boiling sugar.
For taiyaki I would guess that a flour-egg-water batter is used for the outside; a Yorkshire pudding batter (½ cup milk; 1 egg, well-beaten; ½ cup sifted all-purpose flour; ¼ teaspoon salt) is a slightly creamier substitute (which I use for okonomiyaki).
The big problem with taiyaki is having (or not having, actually) the little fish-shaped press or mold.

Taiyaki is a Japanese pancake-like cake traditionally filled with sweet red bean paste (although it can be filled with other things), fried and molded into the shape of a carp.
Most commonly is sweet bean-paste (anko) which is made from azuki beans.
Sometimes odd ingrediants are added, for example one company offers an alternative to the sweet tasting taiyaki by offering one filled with sausage, mayonaise and Shichimi chilli pepper, which supposedly goes great with a beer.

 TAKANE
Since we use a traditional way of making Taiyaki which is an unusual way today (by clicking the picture, how each Taiyaki is being made can be seen), our Taiyaki can not be mass produced.
Today, since most shops make Taiyaki by molding many of them at once, the sound that is being made by turning each of the mold one by one can not be heard.
The outside paste of our Taiyaki is made of flour, egg, water, etc etc. The outside is crispy and the inside is very hot.

Does anyone have a recipe for taiyaki? - Japan Forum
I'd guess the dora-yaki (pancake) seems closest to what I think taiyaki is, but I can't see how to use it with a fish-mold unless taiyaki is meant to be a type of pancake sandwich.
Also, just in case it helps, my level of cooking skill is that with the exception of the nikuman recipe I tried recently I haven't cooked anything from basic ingrediants for over a decade, hence I question things that might seem obvious to others.
My chef friend is trying to help me find somewhere in the UK where I can buy a taiyaki-ki, and with luck I'll be able to try taiyaki soon.
