With soy sauce it is served with Japanese-style hamburgers.
It is used to make takuan, a kind of fermented pickle used in sushi and as a garnish for white rice.
It is claimed, but not historically supported, that a Buddhist monk called Takuan first made this pickled daikon to preserve vegetables for the long winter.

The most famous and articulate source of information relevant to the concept of fudoshin is the letter written by the Zen Buddhist priest Takuan to the master swordsman Yagyu Munenori of the famous Shinkage-ryu school of fencing during the first half of the 17th century.
Takuan and Suzuki further relate fudochi to the Buddhist guardian Fudo Myo-o (Sanskrit Acala-vidyaraja), the Immovable, who protects Buddhism with his sword, rope and glaring fierceness.
Takuan's letter to the famed Yagyu master swordsman, official instructor to the third Tokugawa shogun, makes it clear that attaining this unfettered and imperturbable mind is at the core of true mastery.

He, in effect, writes that when a defender moves in to take the sword, if the one holding the sword tries to prevent her sword from being taken away, her mind is thinking about not losing the sword and is no longer thinking about cutting the defender.
One of the things that I am definitely taking is Takuan's letters.
