Today the malt is peated elsewhere to Talisker’s specification, which lies somewhere between the lightness of the Highland malt whiskies on the mainland to the east, and the heaviness of the Islay malts to the south.
Talisker House was traditionally the residence of the eldest son of the Macleod clan chief and over the centuries saw many distinguished guests.
Talisker is a highly distinctive whisky with a strong, smoky, peaty flavour because both the malt and the water used to make it are heavily peated.

Talisker is the only distillery on the Isle of Skye, and takes its name from a farm some miles away nearer the village of Carbost.
Hugh was a tacksman (senior tenant farmer, who leased land to others) and acquired the lease of Talisker House and estate of Macleod of Macleod.
The distillery was partly rebuilt in 1960 after a fire and its own floor maltings were demolished in 1972.

Few Lowland malts age well beyond their teens as the lightness of the whisky tends to be overpowered by the oak and cedar notes that emerge from the cask.
Lowland malts tend to have a distinctive lightness and oftentimes a "toasted marshmallow" quality, and Highland malts tend to be recognized for their fruity, flowery, or sherry characteristics.
I'll probably have a taste of these and several other whiskies, but I wanted to choose a single malt that was readily accessible, affordable (at least not outrageously expensive), and one that signified the best of what is happening in the world of whisky at the end of the century.

The Talisker Distillery stands at the foot of a beautiful hill, in the centre of the smiling village of Carbost, which, after the bare and rugged track we had passed through, was an agreeable change, and seemed quite a lively place.
The farm and house of Talisker, from which the Distillery takes its name, is about six mil es distant, and is situated in the parish of Bracadale on the other side of the hill.
But to return to the Kilns; bath of them communicate with the Malt Deposit, which is one of the oldest buildings in the Distillery, and is connected with the Mill building by a hopper, which is on the same level as the Malt floor.

After a few years of single malt explorations I came to the conclusion that the freezing cold of the winter winds requires a different malt than the humid heat of the summer.
In this case, the whisky was distilled in the autumn of 1989 and bottled in the spring of 2000.
This malt is extremely oily in the nose and the taste - a characteristic I don't cherish in a malt.

Although this malt isn't overly complex, it's a pleasant dram to sip neat, and at $30 it's a good malt for “around the house” usage.
We are well acquainted with Talisker having visited the distillery a few years ago when we were lucky enough to sip some cask samples with Mike Copland, the distillery manager, so we knew what to expect from the whisky, we just didn’t know what the Gentleman’s Relish would add to the experience.
The paste was briny, the scotch was briny, the brine from the paste bolstered the brine from the Talisker, the brine from the Talisker boosted the brine from the paste.
