The land of Testour was granted the unwilling immigrants, those who could not afford to resettle in chic Tunis, in 1609.
Testour has not lost its old touch, and few places in Tunisia even comes close, in reminding you of the best of Andalucian Spain.
But Testour was not only a Muslim town, and was deep into the 20th century a town with a sizeable Jewish community and had a pilgrimage at the tomb of Rabbi Fraji Chawat attended by Jews from all over Tunisia.

The government established an annual cycle of competitions culminating in the festival of the ma’luf in Testour, a small agricultural town, some 70 kilometres northeast of Tunis, renowned for its historic ma’luf tradition.
The Testour festival served as the national competition between ensembles representing all the regions, and it was adjudicated by delegates of the Ministry of Culture.

The pretty little farming town of Testour lies on the banks of the Oued Medjerda.
In the 17th century Muslim refugees from Andalusia (Moriscos) settled on the banks of the Medjerda and founded a town on the site of ancient Tichilla.
Testour lies on GP 5 (Tunis-Le Kef), 80km/50mi southeast of Tunis.

Paula Wolfert makes the plausible claim that tabil is one of the spice mixes brought to Tunisia by Muslim-Andalusi in 1492.
I agree with her and it does seem possible that tabil may have developed in their community of Testour, in the Tunisian plains west of Tunis near Algeria.
Many of these Moriscos then swelled the ranks of the Barbary corsairs.
