The developed art of cookery is necessarily a late additionif it may be considered to be included at allto the list of fine arts.
The history of comparative cookery is bound up with the physical possibilities of each country and its products; and if we attempt to mark out stages in the evolution of cookery as a fine art, it is necessarily as understood by the so-called civilized peoples of the West in their culmination at the present day.
Meanwhile cookery may be studied rather in the architecture of kitchens, and the development of their appurtenances and personnel, than in any increase in the subtleties of the art; the ideal was inevitably gross; the end was feedinginextricably associated in all ages with cooking, but as distinct from itsfine fleur as gluttony from gastronomy.

But we are acquainted with one instance in which the desire, on the part of a young girl, was so strong to become connected with the kitchen and cookery, that she absolutely left her parents, and engaged herself as a scullery-maid in a gentleman's house.
MODERN COOKERY stands so greatly indebted to the gastronomic propensities of our French neighbours, that many of their terms are adopted and applied by English artists to the same as well as similar preparations of their own.

When Hannah Glasse (1708-1770) published her Art of Cookery by subscription in 1747, little did she realize that she had produced the most famous cookbook of the eighteenth century.
Glasse's life are scarce despite the facts that there were many editions of The Art of Cookery published in the eighteenth and nineteenth centuries, and that another book written by her, The Compleat Confectioner, was also a best-seller.
She was apparently a 'habit-maker to Her Royal Highness the Princess of Wales', according to an advertisement found in the fourth edition of The Art of Cookery.
