This, plus the simple fact this part of the valley was outside of the United States (and therefore beyond American legal jurisdiction), is why the clever Cassidy used the area as Station #1 on the famous Outlaw Trail that ran from here to Mexico.

At sunrise one morning many years ago, we were driving on Pacheco Pass in California's Central Valley.
We reached the summit of the pass, and the San Joaquin valley - once called the salad bowl of America because so much of this country's produce was grown there - was spread out before us.
So while the inspiration for the name is an actual valley, the "valley" is really a metaphor (see, I did pay attention in English class) to describe a bountiful, fertile place full of wonderful flavors and fresh foods.
