"Cajun" humorist Justin Wilson (who describes himself as part-Cajun) was born in Roseland in Tangipahoa Parish, near the Mississippi border.
Originally an itinerant safety engineer, he often encountered Cajuns during his travels, and developed a talent for telling Cajun jokes and stories.
Wilson’s first album of Cajun humor sold over a million copies; he went on to release more than two dozen additional albums — and in the process made famous the "Cajun" expression "I gare-rohn-tee!" He wrote three comedic books: Justin Wilson's Cajun Humor (1974), Justin Wilson's Cajun Fables (1982), and More Cajun Humor (1984).

Cajun is a bit hotter, and the Cajun people learned to cook using whatever wild game and/or seafood was available, due to their locations in or around swamps.
That meant that their dishes featured a lot of crawfish, alligator, possum, venison; in other words "they would eat anything that wouldn't eat them first." I have tried preparing a roue in the past and knew how difficult it could be getting it just right, without burning it.
