It's simply because only Fellowship was ready for the 2001 release and it takes a year to finish up The Two Towers effects shots etc etc. The same is true of Return of the King.
Two Towers is simply fantastic, you are hooked from the very beginning with the flashback of Gandalf's fall to the end credits.
Each character is ultimately defined by the events of the 'middle' and so Two Towers is especially difficult because there are so many characters and subplots.

In one of the earliest scenes of the movie, Saruman identifies them as his own tower of Orthanc at Isengard, and Sauron's Dark Tower of Barad-dûr, and this is in fact one of the many combinations that Tolkien suggested himself.
Tolkien's original was literally divided into two books: the first tells us the complete story of Aragorn's adventures in Rohan and the overthrow of Isengard, and then the second returns to Frodo and Sam, and concentrates on their journey through the borderlands of Mordor.
One of the noticeable differences between The Two Towers and The Fellowship of the Ring is that rather less of the intricacy and detail of the book has made it onto the screen.

With "Lord of the Rings: The Two Towers," it's clear that director Peter Jackson has tilted the balance decisively against the hobbits and in favor of the traditional action heroes of the Tolkien trilogy.
To compress the labyrinthine story into a sentence or two, the enemy is Saruman (Christopher Lee), who commands a vast army of Uruk-Hai warriors against the fortress of Theoden (Bernard Hill).
When Aragorn and his comrades launch an attack down a narrow fortress bridge, we know that the figures toppling to their doom are computer-generated, along with everything else on the screen, and yet the impact of the action is undeniable.

“The Two Towers” introduces some new faces like the King of Rohan Theoden, his niece Eowyn, the elf Haldir and the mystic giant race of the Ents.
The King and his daughter are the rulers of Helm’s deep where the battle is fought, Haldir is also of importance of course, but he dies and doesn’t leave a sincerely big mark afterwards.
The music of “The Two Towers” has gotten somehow a bit more mystic and calm compared to “The Fellowship of the Ring”.

I was worried that The Lord of the Rings: The Two Towers would not be able to work the same magic that The Fellowship of the Ring did on me.
The Two Towers takes our heroes from the first section of the story and follows their disparate adventures.
Also, as the beginning of The Two Towers, the book, was seen at the end of The Fellowship of the Ring, so also it appears that the end of The Two Towers will be seen at the beginning of the The Return of the King.
