And one of the only reasons I even bothered to look into this particular study was because the implication and the rarity in which it is practiced intrigued me. Tiromancy is divination by use of cheese.
Problem: There is very little literature regarding Tiromancy so I had to experiment.
However, among some of my favorite types of divination, there have been Floromancy, Kapnomancy, Stolisomancy and Tiromancy.

 The Sugar Quill > Divination
According to occultopedia, tyromancy, also known as tiromancy or typomancy, works this way: you write the names of your suitors on separate pieces of cheese, and the first cheese to mold bears the name of your ideal mate (although it can be used to predict other things too).
Another method is to place the pieces of cheese into a cage with hungry rodent.

 Neil Gaiman
My curiousity was piqued by your comment about Tiromancy (sometimes with a "y", though that would suggest a rather different Latin root), the telling of fortunes through cheese.
According to Shaw's "Divining the Future: Prognostication from Astrology to Zoomancy" (1998), it was probably practiced by looking at the formation of mold spores on the surface of the cheese, much in the same way as divination through tea leaves.
And I commented during the Equitable Centre talk -- during a question on why the idea of reading the future through entrails and innards cropped up in my fiction -- that I'd never understood how you could tell the future through Cheese, although I knew it was a real way of looking into the unknown.
