Tomalley or lobster paste is the soft, green substance found in the body cavity of lobsters, that fulfils the functions of both the liver and the pancreas.
The tomalley, or hepatopancreas, can be consumed as other livers are, as there are no parts in the lobster that are poisonous.
The hepatopancreas of lobsters may contain toxins that are associated with Paralytic Shellfish Poison (saxitoxin and gonyautoxin) but those toxins leach out when the lobster is cooked in boiling water.

Popular writen opinion Downeast appears to be that tomalley, the green gunk (liver an pancreas) found in the body cavity of a lobster, is not to be eaten.
The traditional Moore family preparation of lobster has always been splitting them down the center, sauting the tomalley with butter, breadcrumbs and worchestershire, and returning it to the lobster prior to broiling.
This is incredibly depresssing to me. The tomalley is the highlight of the lobster.
