Like most onions, the greens were good young, a bit tough and stronger the older they got.
The onions are quite small, not sure if they would be worth the trouble for cooking but I do plan to try them this year, perhaps in some soup or stew.

The reason that it is called Walking Onion is that it sends up a stalk.
It’s actually the first onion to come up.
A lot of times there are snow on the ground, the green shoots will start to come up above the snow before it thaws, so they are the earliest onions.
