 WINE BUSINESS Printer version
Very sweet, high quality wines of the German Beerenauslese and Trockenbeerenauslese style (special late harvest or botrytisized late harvest, vins liquoreux, etc.) are primarily produced in France (Sauternes, Barsac, Monbazillac), Germany, Austria and Hungary and, to a small extent, in the United States, Canada, and South Africa.
Beeren- and Trockenbeerenauslese wines are typically produced from grapes which are infected in the mature state by Botrytis cinerea (noble rot).
Extended maturing and noble rot as well as picking and collecting small volumes over periods of several days prior to pressing causes disintegration and maceration of the berry skin to small cell fragments which are only partially removed during pressing.

Egon Müller Scharzhof - News   (Site not responding. Last check: )
Usually Trockenbeerenauslese is produced in vintages whose quality largely comes from Botrytis Cinerea or “noble rot”, a fungus that infects the berrries, destroys their skins and dwells on their content.
In other vintages the time for selecting Trockenbeerenauslese can be very limited and we tend to harvest it with our complete crew of 25 to 30 pickers in order to bring in the necessary quantity of berries in as short a time as possible.
It was comparatively easy to make Trockenbeerenauslese in 2003 but there is no guarantee that it will be our best ever and while the ones from years like 2001 or 1999 have much lower must weights, it took infinitely more skill to make them and they may eventually be the better wines.

Wine Grape Harvest - Germany 2001
And, although statistics regarding the specific quality (ripeness) levels are not yet available, the German Wine-Growers' Association, Bonn, estimates that the majority of this year's harvest was ripe enough to qualify as high-level Kabinett wine of very solid quality.
It is clear that Riesling and other late-ripening varieties yielded a high proportion of Prädikat wines, including rarities such as Trockenbeerenauslese and Eiswein.
Winegrowers have reported must weights of 185° Oechsle for a Trockenbeerenauslese in late October in the Middle Mosel, and in the Nahe on November 11 Eiswein was harvested at 140° Oechsle, for example.

In my opinion, one of the greatest properties of the Riesling grape is its ability to make appealing wines in a wide variety of styles while retaining a sense of "Riesling-ness", or varietal character.
When tasting a bone-dry version from Alsace or Austria next to a super-sweet Trockenbeerenauslese from Germany, your first thought might be that they are almost as different as two white wines can be, but if you look a little closer, you might start to see some similarities.
When grapes are infected with this fungus at the right time in their development, they shrivel up, concentrating the sugar and flavors, as well as gaining a characteristic honeyed flavor from the botrytis.

 Reading German Wine Labels
There's nothing approachable about this kind of labelling; either you know what a trockenbeerenauslese is, or you're left floundering, wondering what a Qualitatswein mit Pradikat might be, or if 'kabinett' and 'spatlese' might mean something useful.
The Germans cling hard to their traditions, the chances of anyone making these labels even remotely user-friendly in the near future is slim, so grit your teeth and come with me down the riveting road of German wine labels.
At the top end of the German wines is the 'trockenbeerenauslese', wine which is made from selected grapes that are allowed to shrivel on the vine, thus increasing their sugar content.

 Riesling
Because of both its cellar longevity and its ability to maintain varietal identity while reflecting the individuality of its terroir, Riesling may be the best of all the white wine grapes.
Its homeland is Germany, where it has been cultivated since the 1400s or earlier, and where it is made into wines that run the gamut from bone dry and crisp quaffers to the complex, unctuous nectars made from Botrytis-affected, shriveled berries, individually late-picked, and known by the moniker Trockenbeerenauslese.
Johannisberg, the Riesling name has been tarnished by the attachment of its name to other white varietals (Grey Riesling--aka Chaucé Gris--, Walschriesling--aka Italian Riesling--, and Missouri Riesling) that are of far lesser quality and genetically unrelated to the true Riesling.

Trockenbeerenauslese, from the German trocken (dry), beeren (grapes or berries), and auslese (selected), is wine from grapes that have been shrivelled up by the so-called "noble rot" (aka the botrytis fungus) responsible for the best dessert wines worldwide, like French Sauternes.

There are so many wines from small wineries that never make it to the States, that it's hard to give you specific names to look for.
"Trockenbeerenauslese" indicates information about the ripeness and harvest of the grapes used to make the wine.
For TBAs the grapes are allowed to get super-ripe and develop the so-called "noble rot" (same technique used in France's famed Sauternes) that gives a distinctive, complext flavor to the wine.

Nick Dobson Wines Austrian Sweet Wines
Austria has some of the best sweet wines on earth, from one of the most remarkable places in the world for botrytis-affected wine - the Neusiedlersee, a shallow warm steppe lake of about 60 square miles, located in the warmest part of Austria, straddling the Austro-Hungarian border.
The lake's micro-climate is key to the wine's production; the environment around it is flat, marshy, and humid, and nowhere else, with the possible exception of Hungary's Tokajhegyalja, does the noble rot, Botrytis Cinerea, attack grapes so reliably.
Here are made wonderful Auslese, Beerenauslese (BA), Trockenbeerenauslese (TBA), Schilfwein made from grapes dried on straw or reed beds, and obscure noble Ausbruch wines, which are exotic, full, luscious, and which go on forever.
