Schubert: 'Trout' Quintet & String Trios
The young Schubert, inspired by the surroundings of a summer trip in the Austrian Alps, decided to use material from his earlier song ‘Die Forelle’ (’The Trout’, D550) as the basis for the beautiful fourth movement of his Quintet.
For the ‘Trout’ they are joined by the pianist Paul Lewis (himself a fine Schubertian) and double bassist Graham Mitchell: these fine young musicians bring to these works the engaging freshness, calm authority and generosity of spirit the music deserves.
That's true, too, in the Trout Quintet where they are joined by the solid, anchoring tone of bassist Graham Mitchell and, of course, the inimitable Paul Lewis, undoubtedly one of the finest younger Schubert pianists in the world' (Classic FM Magazine)

Trout Quintet - Encyclopedia, History, Geography and Biography
The piece is known as the Trout because the fourth movement is a set of variations on Schubert's earlier lied, "Die Forelle" (The Trout).
As compared to other major chamber works by Schubert, such as the last three string quartets and the string quintet, the Trout Quintet is a more leisurely work, characterized by lower structural coherence, especially in its outer movements, and the Andante.
The importance of the piece stems mainly from the use of an original and innovative harmonic language, rich in mediants and chromaticism, and from the timbral characteristics of the piece.

Liner Notes for Schubert's Trout Quintet -- Greg Sandow
So when Yo Yo Ma and his old friend Emanuel Ax planned a recording of what later came to be called the "Trout" quintet, they thought it made sense to begin with the song, a deceptive little gem which (as the lyrics show) isn’t quite as cheerful as it sounds.
With the song on this recording, everyone can have what must have been Paumgartner’s experience --listening with eager curiosity to the first three movements of the quintet, then smiling when the fourth movement begins, so peacefully, with the melody you wondered if you’d ever hear.
To round out the CD, Yo Yo Ma and Emanuel Ax -- who met when both were in music school -- play the "Arpeggione" sonata, which Schubert (in a none too commercial move) wrote in 1824 for an experimental instrument, a kind of cello built with six strings and frets, like a guitar.

The "Trout" song is based on a rather cute but trite 1783 poem by Christian Daniel Schubart (no relation to the composer) – a fish darts joyously about in a clear stream to elude a fisherman, who finally, to the poet's ire, muddies the brook and catches the trout.

The Piano Quintet in A major, D. 667, clearly reflects the 22-year-old Schubert in his surroundings: summertime vacation in the countryside for a man who had spent his entire life in the city.
Uncommon in its instrumentation, the "Trout" is scored for piano, violin, viola, cello, and double bass, the same as Johann Hummel's Piano Quintet - a favorite piece of Sylvester Paumgartner, the wealthy music patron and amateur cellist who asked Schubert to write the quintet.
As the first three movements led to the "Trout" theme and variations, so the fifth movement - an Allegro giusto played in the Hungarian style by the violin and viola - is a final response to it.
