Fishing for shore turbot   (Site not responding. Last check: 2007-09-19)
Fishing for turbot in the Mediterranean is not a common activity.
Turbot are sometimes caught right near the edge of the water in the last wave when the angler spinning for bass is no longer working the lure.
When fishing specifically for turbot the angler should cast to the right and to the left at about five metres from the edge and retrieve the lure by working it across the waves right near the bottom.

The turbot is a very docile fish, and in the wild they are found in concentrated groups stacking one on top of the other.
They are diamond shaped, compared to the round shape of turbot and dark brown/grey in colour, and live in deep waters sometimes up to 60m in depth and down to temperatures of 6ºC. Mature females of both species are larger than their male counterparts.

Turbot (Scophthalmus maximus Rafinesque) is a commercially important flatfish species occurring throughout the eastern North Atlantic and in the Mediterranean Sea.
The aim of this study was to determine the distribution of genetic variation in wild populations and farmed strains of turbot from both Ireland and Norway, using three highly polymorphic dinucleotide microsatellite loci developed for turbot (Coughlan et al., 1996).
The differentiation and divergence exhibited by the farmed strains (as illustrated by a Neighbour-Joining dendrogram based on Cavalli-Sforza and Edwards (1967) genetic distance) is presumed to be caused by genetic drift during culture.

Turbot is a fish that I order often in France, Spain (rodaballo) and Italy (rombo), and I find the turbot from the Atlantic in general superior to the Mediterranean variety, but not quite on par with a Black Sea Turbot caught in the Marmara sea.
Indeed the dense and meaty turbot from the cold waters of Brittany is quite similar in taste to the Black Sea turbot that is highly prized in Istanbul in Spring.
Smaller turbots (turbotin) do not have much taste, and I was quite angry when I was served the latter in one of France’s foremost seafood temples (Maison de Bricourt or Roellinger) last summer under the name of turbot.
