On the fringes of Turpan you will see their drying houses, intriguing structures built of mud-brick laid to a perforated course to allow in the right mix of light and wind to shrivel the grapes.
As you walk around Turpan, you may well hear the sound of Uygurs playing their tamburs (a stringed instrument) and the sounds of male and female dancers and their audience having a good time, and not for the tourists but for their own entertainment.
