  USS Enterprise (1874) - Wikipedia, the free encyclopedia
The fifth USS Enterprise, a bark-rigged screw sloop, was launched 13 June 1874 at Portsmouth Navy Yard, Kittery, Maine, USA, by John W. Griffith, a private contractor; and commissioned 16 March 1877, Commander George C. Remey in command.
Enterprise was decommissioned at New York on 21 March 1886.
Enterprise was again commissioned 8 July 1890, and for the next year operated principally in the Caribbean.

He graduated on 10 June 1887 and, after the required two years of sea duty during which he served on the European Station in Enterprise and Lancaster, was commissioned ensign in 1889.
Over the ensuing three years, he served at sea--first in Alliance and then in Endeavor—-until he was assigned to the office of the Navy's Judge Advocate General in 1892.
USS Thomas Washington (AGOR-10) was named for him.

Enterprise next sailed to the Mediterranean, raising Gibraltar on 26 June 1801, where she was to join other U.S. warships in writing a bright and enduring page in American naval history.
Refitted and renamed Intrepid, the ketch was given to Enterprise's command-ing officer, Lieutenant Stephen Decatur, Jr., for use in a daring expedition to burn frigate Philadelphia, captured by the Tripolitans and anchored in the harbor of Tripoli.
Enterprise continued to patrol the Barbary Coast until July 1804 when she joined the other ships of the squadron in general attacks on the city of Tripoli over a period of several weeks.

The full entry for CVAN-65 from the Dictionary of American Naval Fighting Ships is available on-line, but since DANFS was published in 1963, and the ship was commissioned in 1961, the entry is very short.
I regard "The Making of Star Trek", "The Star Trek Encyclopedia" and "Star Trek: TNG Technical Manual" as nearly canon, since they were written by the producers.
The "Star Fleet Technical Manual" by Franz Joseph was mostly well researched, (there are some errors) and was once considered nearly canon, but it has been contradicted many times since its publication over 20 years ago.
