Uncle Billy opens the heavy latch on the door, and we step inside, enveloped by the darkness and the sharp smell of smoke and aging meat.
Good smoking weather, says Uncle Billy, is like good duck-hunting weather "I want it to be miserable--damp and cold." But the secret that distinguishes his cured hams from others is the wood he uses for smoking.

The cut of meat, which comes from the breast of the animal between the front two legs, is coarse and heavily muscled.
The big cut of meat yields juicy, tender slices of beef with a tangy, caramelized crust rimmed with a pink smoke ring, evidence of the meat's time in the smoker.
For a hunk of meat that could stop a bullet when it's first put in the smoker, the brisket had been transformed by smoke and gentle heat into delicious, tender strips of smoke-infused, juicy meat I could cut with a fork.

As with so much else on a farm, says Uncle Billy, the first thing you need for successful ham-curing is the right weather—a cold snap in January with temperatures in the high 20s to low 30s at night.
Four things influence the salting process: the thickness of the meat, the moisture of the meat, the humidity of the air, and the temperature.
Once the ham is thoroughly coated, Uncle Billy pokes a hole in the thick end with an ice pick, makes a loop of rustproof copper wire, and hangs it in the smokehouse, hock down.

He provided large shipments of meat to the US Army, in barrels that were stamped with the initials "U.S." Supposedly, someone who saw the "U.S." stamp suggested -- perhaps as a joke -- that the initials stood for "Uncle Sam" Wilson.
Uncle Sam's traditional appearance, with a white goatee and star-spangled suit, is an invention of artists and political cartoonists; Samuel Wilson did not look like the modern image of Uncle Sam.
As a rule, Brother Jonathan was drawn with a feather in his cap, while Uncle Sam was not; and Uncle Sam is nearly always drawn with a beard, while Brother Jonathan was clean-shaven.

It was potentially easy to overlook Zappa's melodic gifts on albums past, but on Uncle Meat, he thrusts them firmly into the spotlight; what few lyrics there are, Zappa says in the liner notes, are in-jokes relevant only to the band.
Thus, Uncle Meat became the point at which Zappa began to establish himself as a composer and he would return to many of these pieces repeatedly over the course of his career.
Taken as a whole, Uncle Meat comes off as a hodgepodge, with centerpieces scattered between variations on previous pieces, short concert excerpts, less-realized experiments, doo wop tunes, and comedy bits; the programming often feels as random as the abrupt transitions and tape experiments held over from Zappa's last few projects.

:: Music on Tnt :: Frank Zappa Uncle Meat.

Uncle Meat was a watershed in Frank Zappa's career.
We are then presented with "The Uncle Meat Variations", a longer instrumental piece which features some amazingly good music (keyboard- dominated at first, guitar-oriented by the end).
The first, and by far the longest, is primarily a series of spoken word in-jokes regarding hit singles, buns, showers, burgers, chickens, monsters, the Acquarian age, and other such concerns; the second track is a shorter version of the same.

I think this is one case where the additions to the original album actually detract, or at least they should have been put on the tailend so they would not interfere with an album that was already well thought out.

Stereophile: Frank Zappa on CD (and LP), Part I-III
The obscure and little-bought Lumpy Gravy aside, 1968's 2-LP Uncle Meat, "most of the music from the Mothers' movie of the same name which we haven't got enough money to finish yet," was Zappa's first major musical statement.
The complexity and density of this music, even almost 20 years later, is staggering, and all the more remarkable when one realizes that, at the time of recording, at least half of Zappa's musicians could not read a note of music.
In short, the original configuration of Uncle Meat is very well served here; considering that the entirety of that original release could have fit on a single CD, however, this double package (which I've seen retailing for $34) is not a good deal.
