VGA may refer to the 15-pin VGA socket on a PC in general in order to contrast it with a digital DVI socket for flat panels.
VGA was introduced on IBM's PS/2 line in 1987 and quickly made the earlier CGA and EGA display interfaces obsolete, which were actually digital, but with lower resolution.
The VGA socket on the back of a PC uses a high-density DB-15 connector, which is contrasted here with the full-size DB-15 as well as the DB-9, which shares the same shell size.

True 16-bit VGA is clearly the superior of the two in this context; word-sized writes actually happen quite often in text mode, as both a character and its attribute are frequently written to memory with a single instruction.
VGA memory must also be accessed many times by the CPU in order to draw any sizable image, because there are so many pixels on the screen, in so many colors; however, those accesses must be shoehorned between the video data reads described earlier.
If, on the other hand, a VGA is inherently capable of responding as quickly as normal AT system memory (as is theoretically the case with a VGA built around 120-nanoseconds VRAM), then the 8-bit-device wait states spell the difference between a VGA that responds in three cycles and one that responds in six cycles.

There are lots of other ways to set up the VGA that work just as well as the standard modes and let you do things you can't do with the standard modes.
This seems to be a restriction caused by the planar nature of the VGA display memory.
The VGA has 4 planes of display memory and it reads a byte (8 bits) from all 4 planes (total of 32 bits) once for every 8 pixels (one character width) that it draws.

 VGA Cable from CAT5
A couple of assumptions here,  the projector has a 15 pin VGA style video port on it.  If it has 5 BNC connectors instead, then the recipe changes a bit.  You must use three pairs for R, G and B, and split the fourth pair for HandV, each connected to a BNC. 
I've attached a picture of a VGA connector.  You will need two male connectors with hoods.  I recommend the metal hoods.  You can get them at Radio Shack or any decent electronics parts store.
