Fig and prosciutto salad with goat's cheese toasts
The fig and prosciutto salad with goat's cheese toasts dish was dominated by the intensity and sweetness of the figs, which was offset by the saltiness of the prosciutto and the tanginess of the goat's cheese.
Although I haven't changed my mind, serving verdelho with food reinforced (yet again) that the best food and wine partnerships are those in which the wine underplays the food and serves as a palate cleanser rather than seeking to take centre stage.

 Verdelho - Wine Diva
Verdelho is one of Australia's niche white wine varieties.
Although grown on the mainland, it is most recognised for its vinification into fortified wine on the island of Madeira, producing a medium-dry style with high acidity, high alcohol and a citrus tang.

Gourmet Traveller - Food For Wine - Food for verdelho
One of the rising stars is verdelho, a Portuguese white-wine variety grown principally on the volcanic island of Madeira.
But whether made into a blend or as a varietal wine, verdelho in Australia is a very different wine from that produced on Madeira, where it is fortified during fermentation by adding alcohol in the form of brandy spirit.
Verdelho, the most planted variety on the island, is ranked second in degree of dryness (the driest being sercial madeira, the sweetest, malmsey).

The consumer is presented with one unusual, perhaps unknown, name but right beside it is probably the best known grape name in the world to lend reassurance that this wine is not too far from the mainstream.
Although, as a region, it produces less than three per cent of the national total, it attracts a disproportionate amount of favourable publicity, mainly because its wines have a finesse and elegance that set them apart from many of their more muscular cousins to the east.

Madeira is produced from four main types of grapes: Verdelho and Sercial, the dry varieties, and Malvasia and Bual (or Boal), the sweeter, richer grapes.
Sercial and Malvasia, also known as Malmsey, are wines produced from vines that don't have many grapes and take longer to mature.
Verdelhos tend to be rounder and darker than Sercials, but they have a tasty bitter finish that still qualifies them as an aperitif.
