In any case, over the centuries the vines adapted superbly to the soil around San Gimignano, and by the Renaissance Vernaccia was considered Italy's finest white wine, fit to fire the imaginations of poets, artists and Popes.
"Vernaccia is really a red wine made from white grapes," observes Montenidoli's Elisabetta Fagiuoli, who has been making it the traditional way for 30 years and is now one of the driving forces behind the wine's rebirth.

Vernaccia di San Gimignano was the first of Italy's wines to receive D.O.C. status and as of the 1993 vintage was elevated to D.O.C.G. standing.
It is thought that the grape from which Vernaccia di San Gimignano is produced originated in Greece and was brought to Italy in the early Middle Ages, first surfacing in documentation in the late 1200s.
Spalletti Vernaccia di San Gimignano is produced by fermentation of gently-pressed, destemmed grapes which occurs at a temperature of 15 to 18 C (59 to 65 F) in stainless steel tanks with neither malolactic fermentation nor oak contact.
