Video RAM (VRAM) is a term generally used in computers to describe RAM dedicated to the purpose of displaying bitmap graphics in raster graphics hardware.
Video RAM is usually physically separate from the main RAM residing in a computer system.
As the computer busses also improved in speed the CPU was able to "squirt" its updates to the video display's own memory at such high speed that it could be timed to do all of its updates in the short periods when the video hardware was idle, during the vertical blank interrupt for instance.

A buddy of mine and I have a little ongoing debate over which is more important to a video card's performance, the ram or the chipset.
Even though it upped the playing field in the amount of ram that was available on video cards, the previous generation GeForce4 Ti was an amazing piece of technology - even with smaller amounts of memory.

I thought the apature couldn't exeed the RAM on the Video Card, or it could only be half the VC RAM.
If a game really does need to access and use system RAM (which as you say is much slower and would be detrimental on performance) then perhaps the card isn't good enough for the game being played.
