Vorondil was a great hunter, and hunted wild kine in the lands east of the Sea of Rhûn.
The great Horn of Gondor that Boromir of the Fellowship of the Ring had was descended from Vorondil, an heirloom of the House of Húrin.

So we do know that there were at least wild cattle in Middle-earth...and that Boromir's horn was not from some exotic and now-extinct beastie.
