 About Water Activity
Water activity is derived from fundamental principles of thermodynamics and physical chemistry.
Water activity instruments measure the amount of free (sometimes referred to as unbound or active) water present in the sample.
Since the state of the matrix (glassy vs. rubbery state) is dependent on temperature, one should not be surprised that temperature affects the water activity of the food.

 Dairy Chemistry
The water activity (aw) represents the ratio of the water vapor pressure of the food to the water vapor pressure of pure water under the same conditions and it is expressed as a fraction.
Water activity is in practice usually measured as equilibrium relative humidity (ERH).
The water activity scale extends from 0 (bone dry) to 1.0 (pure water) but most foods have a water activity level in the range of 0.2 for very dry foods to 0.99 for moist fresh foods.

 ecology.html
Water is also exchanged between the hydrosphere, the lithosphere, the atmosphere and the biosphere in regular cycles.
The Earth, from an ecological point of view, consists of several compartments, the hydrosphere (or sphere of water), the lithosphere (or sphere of soils and rocks) and the atmosphere (or sphere of the air).
For example, water may circulate between ecosystems by the means of a river or ocean current.

 Water activity
Water activity is defined as equal to the ratio of the fugacity (the real gas equivalent of an ideal gas's partial pressure) of the water to its fugacity under reference conditions, but it approximates well to the more easily determined ratio of partial pressures under normal working conditions.
Water activity prediction may also be achieved by combining the effects of the chemical groups (rather than molecules) present, where suitable parameters are available [ 557 ].
Shown right is an indicative water activity isotherm displaying the hysteresis often encountered depending on whether the water is being added to the dry material or removed (drying) from the wet material.

Water: the structure and properties of liquid water
Supercluster of 13 icosahedral water clusters ( superstrand of water icosahedral clusters)
Because of its clear importance, water is the most studied material on Earth but it comes as a surprise to find that its behavior and function are so poorly understood (or even ignored), not only by people in general, but also by scientists working with it everyday.
Water seems, at first sight, to be a very simple molecule, consisting of just two hydrogen atoms attached to an oxygen atom.

 GBX - Water Activity Meter
Water activity is defined as the Equilibrium Relative Humidity - ERH divided by 100.
For pure water aw = 1.00 The water activity of a substance can be calculated by placing a sample in an airtight enclosure and measuring the dew point in the enclosure and the sample temperature.
The FAst 1 is a high speed water activity measurement meter that uses this principle to produce water activity data in a user friendly way.

 The Water Cycle
The water vapor or steam leaves the river, lake or ocean and goes into the air.
Evaporation is when the sun heats up water in rivers or lakes or the ocean and turns it into vapor or steam.
When water falls back to earth as precipitation, it may fall back in the oceans, lakes or rivers or it may end up on land.

 The Water Cycle
Water is so important to the body that a person will die more quickly from lack of water than from lack of food.
Your body needs water to digest food, absorb it, and carry it to all parts of your body.

MarsDaily.com - Your Portal To Mars
The salts presence in the ice-containing frozen soil of Mars may be responsible for the liquid water phase appearance in the regolith surface layer (seasonally) in a broad range of negative temperatures.
It is generally accepted that early in its history immense floods of water resulted in substantial erosional landforms being created across Mars.
In part two of our reports on Martian water sciences, Bruce Moomaw looks at the issue of axial obliquity and how this may be central to regulating conditions across Mars over many thousands of years.

 Water Cycle
This activity is designed to help students understand that water picks up natural and man-made substances as it moves over and through the earth.
The water cycle is the movement of water through the environment to and from the atmosphere, oceans, seas and landmasses.
Water can be found in all three states of matter during the cycle: solid (ice caps), liquid (lakes) and gas (water vapor).

§110.3(r), Water activity (aw) is a measure of the free moisture in a food and is the quotient of the water vapor pressure of the substance divided by the vapor pressure of pure water at the same temperature.
In the definitions, §110.3(n), it says "Safe-moisture level is a level of moisture low enough to prevent the growth of undesirable microorganisms in the finished product under the intended conditions of manufacturing, storage, and distribution." The maximum safe moisture level for a food is based on its water activity (aw).

Ideas to add to water play: a drop of food coloring, turkey basters, funnels, cups, dish soap, boats, plastic toys, brushes and sponges, ice, cold or warm water, baby dolls or play dishes to wash, toddler safe balls, items that will sink or float.
Evaporation occures when the particles of water become warm enough that they trun into vapors and leave the cup and escape into the air.
