Water leaving the wheel or turbine is drained through a tail race, but this channel may also be the head race of yet another wheel, turbine or mill.
The oldest of these were horizontal mills in which the force of the water, striking a simple paddle wheel set horizontally in line with the flow turned a runner stone balanced on a shaft leading directly up from the wheel.
Adjusting the sluice gate and thus the speed of the water past the main wheel allowed the miller to finely adjust the speed of his stone(s) depending on the type of grain being milled.

Both mills originally had two pairs of milling stones, four pairs in all, and for much of its life it was the largest water mill in Devon.
The head sluice which controls the water intake from the River Otter to the mill stream, the middle sluice which is a by-pass to divert excess water to return to the river and to control flooding in the village, and a third set, just ahead of the waterwheels, allows for final adjustments.
It is difficult to determine the horse power as there is a considerable wastage of water inside the wheel chamber, but each of the two wheels is capable of simultaneously turning two mill stones, each 1.2m in diameter and weighing about one tonne each.

This allowed the new mill building to incorporate the ground space formerly occupied by the old house The new mill was 5 storeys high with a locum on either end and was powered by both water and steam and along with Hellesdon mill it was one of the largest mills in the county.
Curiously the water was turned through 90° at the last minute in order to reach the wheel, which was set at right angles to the flow of the river.
The mill was destroyed by fire on 7th July 1924 and the remaining walls were taken down for safety shortly afterwards.
